Recipe Ingredients for quinoa pilaf

3/4 cup quinoa, dry
2 teaspoons olive oil
3 scallions
3 cloves garlic
2 1/2 cups boiling water
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup dried cranberries
1/4 cup chopped pecans

Recipe Directions for quinoa pilaf

  1. rinse quinoa and drain

  2. in skillet, heat oil over med heat

  3. add scallions(sliced) and garlic (minced) and cook 2 mins

  4. stir in quinoa and cook 2-3 mins

  5. add boiling water, salt and pepper

  6. reduce to simmer and cover, cook 20-25 mins or until quinoa is tender

  7. stir in cherries, pecans sweet potato chunks and added protein
