The rich nutty flavor of quinoa is tossed with walnuts and parsley for an tasty side dish that can be served warm or room temperature.

Recipe Ingredients for Quinoa Pilaf

1 tablespoon vegetable oil
1/2 cup chopped onion
2 carrots, chopped
1 cup quinoa
2 cups vegetable broth
2/3 cup chopped walnuts
1/4 cup chopped parsley

Recipe Directions for Quinoa Pilaf

Heat oil in saucepan over medium-high heat. Cook onion in oil for 5 minutes or until translucent. Add carrot and cook for 3 minutes more. Stir in quinoa and vegetable broth, bring to boil. Reduce & simmer, cover and cook 15 to 20 minutes or until quinoa is tender and fluffy. In a bowl toss quinoa together with walnuts and parsley.
