This is a modified Weight Watcher recipe. The original has only 1 tsp olive oil and only 2 tbsp reduced-fat feta. I increased the oil and feta to add more flavor. I also made it into a salad, adding the vegetables raw to the cooked quinoa. Yields 1 cup per serving. 3 Weight Watcher points per serving.

Recipe Ingredients for Quinoa with Peppers, Tomatoes, and Feta

2 cups water
1 cup quinoa, uncooked
1 tbsp olive oil
1 onion, medium, finely chopped
1 green pepper, medium, finely chopped
3 tomatoes, roma, chopped
1/2 tsp salt
1/4 tsp pepper
6 oz feta cheese, reduced-fat
2 tbsp parsley, fresh, chopped

Recipe Directions for Quinoa with Peppers, Tomatoes, and Feta

  1. Bring the water to a boil in a saucepan; stir in the quinoa. Reduce the heat and simmer, covered, until tender and most of the water evaporates, about 10 minutes; drain.

  2. Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, until tender, about 6 minutes. Stir in the tomatoes, salt, and pepper and cook until soft, about 5 minutes. Stir in the quinoa; heat through. Remove from the heat. Gently fold in the feta cheese and parsley.
