Quinoa bowl with veggies, tofu & peanuty sauce.

Recipe Ingredients for Quinoa-peanut bowl

1/2 c quinoa
2 carrots
2 c cabbage
3 c spinach
2 Tangerines, (Mandarin Oranges)
3 T natural peanut butter, crunchy
10 g Agave Nectar
1 T soy sauce
3 T lime juice
1 clove garlic
2 T water

Recipe Directions for Quinoa-peanut bowl

  1. Cook quinoa until fluffy.

  2. Shred carrots, cabbage and spinach.

  3. Peel mandarins and separate into segments.

  4. In a food processor, process peanut butter, agave, soy, lime juice, garlic and water, adding more water if too thick.

  5. In a large bowl, combine quinoa, veggies and dressing.
