Healthy quinoa side dish with sauteed onions and mushrooms.

Recipe Ingredients for Quinoa with Mushrooms Side Dish

1 cup Quinoa
1 tbsp Salted Butter
1 cup Organic Chicken Cooking Stock
2 clove Garlic
1/4 tsp Kosher Salt
1 medium Yellow Onions
20 pieces raw Organic Cremini Mushrooms Packaged
1 tablespoon Thyme

Recipe Directions for Quinoa with Mushrooms Side Dish

  1. Melt butter in a saucepan over medium heat. Add the diced onions and mushrooms and cook approx 5 minutes, until tender. Add garlic and cook 1 minute. Then add quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender.

  2. Add remaining ingredients and toss. Serve warm or room temperature.
