Gluten free vegetarian mushroom soup

Recipe Ingredients for Quinoa Mushroom Soup

1/2 cup quinoa
2 tbsp margarine
1 cup onion
8 cup mushroom
4 cup low sodium chicken stock
1 tsp garlic
1 cup skim milk
1/2 tsp salt

Recipe Directions for Quinoa Mushroom Soup

  1. Toast quinoa for 5 minutes then set aside in a bowl.

  2. Melt butter in sauce pan, add onions and mushrooms and sauté for 7 minutes.

  3. Remove 2 cups of mixture and set aside.

  4. Add chicken stock, garlic and quinoa. Bring to a boil. Cover and let simmer 17 minutes.

  5. Puree in 2 batches in a food processer or blender.

  6. Return soup to saucepan, add milk and reserved mushroom and onion mixture.

  7. Reheat slowly while stirring often.

  8. Serve hot.
