AGoodAppetite blog, (adapted from Bon Appetit Jan. '10). The quinoa does have that bite which is similar to the rice in risotto but it doesn't release the starch which gives risotto its wonderful creaminess. I'll make this again & perhaps add some kale to it for a little green. Sample Revew: "I cooked the quinoa in the partially sauteed mushroom/onion mixture. I just sauteed the onions until translucent, added mushrooms and a few minutes later added the quinoa and water."

Recipe Ingredients for Quinoa Mushroom Risotto

1 cup water, (Becky: or stock)
1 salt
1/2 cup quinoa, (85g)
2 tsp olive oil
3/4 cup red onion, chopped
1 clove garlic, minced
200 g mushrooms, (4-6 oz crimini) stemmed & sliced
2 tsp fresh thyme leaves, chopped
1/4 cup chicken stock, ("the recipe called for 1/4 c (2oz) white wine but I used red", some reviewers preferred chicken stock)
1 oz dry sherry (Becky add-in)
1 salt
1 pepper
20 g grated parmesan, optional

Recipe Directions for Quinoa Mushroom Risotto

  1. Bring the water to a boil. Add a pinch of salt & the quinoa. Reduce the heat, cover & let simmer for 13 - 15 minutes until all the water is absorbed.

  2. While the quinoa is cooking, heat the olive oil in a skillet over medium-high heat. Add the onion & sauté until it begins to brown. Add the garlic & sauté for about 30 seconds.

  3. Stir the mushrooms & thyme into the pan. Cook until the mushrooms are very tender.

  4. Pour in the wine & stir while cooking until reduced & slightly syrupy.

  5. Stir in the cooked quinoa. Season with salt & pepper. Serve with parmesan sprinkled on top.
