Recipe Ingredients for Quinoa Minestone Soup with Pistou

2 large carrots, chopped
1/2 cup chopped celery
1 large yellow onion, chopped
3 garlic cloves, finely chopped
5 oz. fresh spinach, chopped
1/2 cup fresh or frozen peas (that have thawed)
2 tbsp fresh rosemary
2 tbsp fresh chopped basil
15 ounces can black beans
15 oz diced tomatoes
2 tbsp tomato paste
4 cups of vegetable broth
2 cups water
3/4 cup of quinoa
3 tbsp olive oil
1/2 cup basil
2 tbsp olive oil
2 tbsp parmesan cheese
1/4 cup walnuts
1 garlic clove

Recipe Directions for Quinoa Minestone Soup with Pistou

  1. In a large pot, heat the olive oil over medium heat. Saute the onion, garlic, celery and carrot until they are soft, about 10 minutes. Add in the bay leaves, rosemary, broth, beans, tomatoes, tomato paste, and quinoa. Turn the heat up to high and bring to a boil, then reduce back to medium, cover and allow to simmer until the quinoa is tender.

  2. Stir in the basil, spinach, and peas and cook a few minutes more.

  3. Place the remaining basil, parmesan cheese, olive oil and garlic and walnuts in a food processor until combined. Serve on top of the soup
