Recipe Ingredients for Quinoa-Lentil Salad

1 cup quinoa
2 cups vegetable broth
3/4 cup dried lentils, rinsed and drained
1/3 cup olive oil
1/3 cup red wine vinegar
3 cloves garlic, minced
1/2 cup kalamata olives, pitted and chopped
1 cups crumbled feta cheese
1 small red onion, diced
1/2 cup finely chopped fresh mint leaves
1/2 cup chopped fresh dill
1 salt and pepper to taste

Recipe Directions for Quinoa-Lentil Salad

  1. Rinse the quinoa; cook in the broth. Also cook the lentils. Rinse the lentils after cooking.

  2. Add the other stuff. It needs to rest for a couple hours in the refrigerator to allow the flavors to settle in together.
