Healthy veggie and protein filled vegetarian salad

Recipe Ingredients for quinoa greek salad

1 c. quinoa
2 c. water
9 oz grape tomatoes
1 large cucumber
1/2 red onion
15 oz chick peas
7 oz. fat free feta
1 tablespoons olive oil
1 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon oregano

Recipe Directions for quinoa greek salad

  1. Cook quinoa according to directions on the package

  2. Combine quinoa with all the veggies

  3. Create a dressing out of the olive oil, balsamic, and oregano

  4. Toss quinoa mixture with feta cheese and dressing

  5. Serving size = 1 c.
