Recipe Ingredients for Quinoa Greek Salad ( adapted from Fluffy on Food.Com)

2 c chicken stock
1 c quinoa
1 c cucumber, diced
1/4 c sliced green onion
1/4 c sliced kalamata olives
1/4 c red onion, diced
2 ounces feta cheese, crumbled
1/4 c lemon juice
2 T olive oil
1/2 t basil
1/2 t oregano

Recipe Directions for Quinoa Greek Salad ( adapted from Fluffy on Food.Com)

  1. cook quinoa in chicken stock according to package directions

  2. transfer to a bowl

  3. mix up dressing of lemon juice, olive oil, basil, and oregano

  4. toss dressing with warm quinoa; let cool

  5. stir veggies and cheese into cooled quinoa
