Quinoa adds crunch to thi yummy granola

Recipe Ingredients for Quinoa Granola

2 cups rolled oats
2 cups quinoa, rinsed and dry
1 cup apple juice, concentrate
1 1/2 tbsp sesame oil
2 bananas, pureed until smooth
1 tsp vanilla extract
1 tsp pumpkin pie spice
1/3 cup coconut, shredded
1/3 cup sunflower seeds, raw unsalted
2/3 cup raisins

Recipe Directions for Quinoa Granola

  1. Prehat oven to 350F

  2. In a med-sized mixing bowl, mix the oats and quinoa. Transfer the grain mixture to a baking tray and spread into one even layer. Toast the mixture in the oven for ten minutes, stirring the mixture every three minutes. Meanwhile, follow steps three and four.

  3. In a small pot, bring the juice to a boil. Let the juice boil until it is reduced into a syrup. Be very careful to constantly watch the mixture when it boils as it burns easily. Use a fork to test the thickness of the liquid by dipping the tip of the fork into the liquid and then setting it aside. If the liquid dries thickly on the fork, it is the right consistency.

  4. Tranfer the apple concentrate to a large bowl and stir in the sesame oil, bananas, vanilla, and pumpkin pie spice. Add the toasted oats, coconut, and sunflower seeds, making sure everything is well-coated with apple juice mixture.

  5. Transfer the mixture to a baking tray and bake for 10 minutes in the pre-heated oven or until golden brown. Remove from the oven and cool.

  6. Store in an airtight container in the fridge. Serve!
