Quinoa is a high-protein whole grain that is tender and mild in flavor, and it cooks up in only 15 minutes. Use quinoa just like you use rice. It is available in most supermarkets.

Recipe Ingredients for Quinoa with garlic, almonds, and raisins

1 cup quinoa, rinsed well
1 3/4 cups chicken stock, low sodium
1/8 cup almonds, sliced
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/3 cup parsley, chopped
1/4 cup raisins
1 tablespoon lemon juice

Recipe Directions for Quinoa with garlic, almonds, and raisins

  1. Directions:

  2. Place the quinoa in a saucepan and cook over medium heat until toasted.

  3. Add 1 3/4 cups low-sodium chicken stock and bring to a boil.

  4. Reduce the heat to medium-loq and simmer, covered, until the liquid is absorbed.

  5. Remove from the heat and let sit, covered, for 2 minutes.

  6. Toast the almonds in a skillet over medium heat, stirring, until golden brown. Remove from skillet.

  7. Add the olive oil and the garlic to the skillet and cook over medium heat, stirring, until golden brown.

  8. Fluff the quinoa with a fork. Add the almonds, garlic, olive oil, parsley, raisins, and lemon juice. Season with salt and pepper according to taste.
