A fantastically beautiful vegan salad that is chock full of wonderful fresh foods, tossed with quinoa and a lightly sweet vinaigrette YUM!!

Recipe Ingredients for Quinoa, Fruit & Veggie Salad

1 cup uncooked quinoa, prepared
1 peach, diced
1/2 cup green peas
3 strawberries, sliced
15 green grapes, halved
1/3 cup walnut pieces
1/2 cup broccoli florets
1/2 cup okra, sliced
0.33 cup olive oil
2 tbsp balsamic vinegar
4 tbsp agave syrup
1 tsp coriander or cilantro
4 tbsp apple cider vinegar
1/4 cup red onion, chopped
1 large carrot, chopped
1/2 cup red pepper, sliced

Recipe Directions for Quinoa, Fruit & Veggie Salad

  1. Rinse the uncooked quinoa under cold running water. Drain. Cook the quinoa by bringing 2 cups of water, with a touch of salt, to a boil. Add the quinoa and reduce the heat to a simmer. Cover and let cook until all the water is absorbed. About 15-20 minutes.

  2. While the quinoa is cooking, slice and dice whatever veggies and fruits you want to add. The salad ingredients listed are just what I did tonight. Trust me, it is wonderful with whatever ingredients sound good to you. Mix the vinaigrette and after everything is ready, toss together.
