Recipe Ingredients for Quinoa Fruit and Tofu Salad

3 oz Tofu, Extra Firm
0.3 cup Quinoa
0.25 oz Mint
0.13 cup chopped Scallions
1 serving Red Wine Vinegar
0.5 fl oz Orange Juice
0.25 serving Extra Virgin Olive Oil
0.13 cup, in shell, edible yield (7 nuts) Walnuts, English
0.5 small (2-3/4") Apples
0.25 cup chopped Red Onion
1/4 cup Dried Cranberries

Recipe Directions for Quinoa Fruit and Tofu Salad

  1. Cook tofu and quinoa seperately. Toast walnuts for about 5 minutes in oven at 400F.

  2. Whisk mint, scallion, vinegar, orange juice and olive oil in bowl.

  3. Mix in walnuts, apple, red onion, and dried cranberries.

  4. Add quinoa and toss to coat. Top with tofu.
