Quinoa with feta, swiss chard, and lack olives

Recipe Ingredients for Quinoa With Feta, Swiss Chard, and Black olives

1.5 cup Quinoa
0.5 tsp Salt, Table
1 cup chopped Red Onion
1 tbsp Olive Oil
1 cup Chard, Swiss
2 serving Garlic Cloves
4 oz Sliced Olives
4 oz Feta Cheese Crumbles

Recipe Directions for Quinoa With Feta, Swiss Chard, and Black olives

  1. Place quinoa in a strainer and rinse with cold water until water runs clear. Drain. Combine quinoa, 2 cups water, and salt in a heavy, medium sized sauce pan. Bring to a boil, reduce heat, cover, summer until quinoa is just tender and water is absorbed(~20min)

  2. While quinoa is cooking, heat olive oil in a large skillet. Saute onions for 1 to 2 minutes, until just tender. Stir in chard and carlic, and toss to coat with oil. Cook for 4 - 6 min unil chard is tender. Stir in olives, and cook for 1 min longer

  3. Remove from heat and stir in quinoa, mixing until combined well. Season with salt and pepper. Sprinkle with feta cheese and serve immediately.
