Recipe Ingredients for Quinoa and Feta Peppers

1 red bell pepper
3/4 cup uncooked quinoa
1/8 cup diced onion
1/4 cup feta cheese
1 tbsp olive oil

Recipe Directions for Quinoa and Feta Peppers

  1. Cook quinoa according to box instructions. Saute onion in pan with oil. Remove from heat. Add cooked quinoa and feta cheese. Stir.

  2. Cut red pepper in half and remove stem and seeds. Fill each half with the quinoa mixture.

  3. Bake at 400 degrees for 12-15 minutes.
