Yummy Quinoa with Veggies. Serves 4

Recipe Ingredients for Quinoa Curry

1 cup Quinoa
1 1/2 tbsp. Extra Virgin Olive Oil
1/2 Onion
1 tsp. Ginger Root
1/2 Green Pepper
1 tsp. Turmeric
1 tsp. Coriander
1/4 tsp. Cinnamon
1 3/4 cups Water
1/2 cup Sugar Snap Peas
1 tsp. Sea Salt
8 oz fresh sugar snap peas

Recipe Directions for Quinoa Curry

  1. 1. Place Oil and Diced Onions in a heavy saucepan. Saute on med heat 5 mins.

  2. 2. Add ginger root (fresh), pepper, and quinoa. Cook for one minute stirring constantly.

  3. 3. Stir in the turmeric, coriander, cinnamon, and salt. Cook for one minute stirring occassionally.

  4. 4. Add water and bring to boil. Cover, reduce heat, and simmer for 15 minutes.

  5. 5. Stir in peas. Cover and cook for four or five minutes or until peas are tender and all the water has been absorbed.

  6. 6. Fluff with a fork before serving.
