Recipe Ingredients for Quinoa with Cucumbers, Tomatoes, and Chick Peas

1 cup Quinoa
1 3/4 cup (8 fl oz) Water
1/8 tsp Salt, Table
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1/2 cucumber (8-1/4") Cucumber
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1.33 tbsp extra virgin olive oil
1 1/2 fl oz lime Juice
1 tsp Cumin

Recipe Directions for Quinoa with Cucumbers, Tomatoes, and Chick Peas

  1. Bring quinoa to a boil in 1 3/4 c salted water. Reduce to medium-low heat, cover and simmer for 20 minutes

  2. Chop tomatoes and cucumbers.

  3. Add all ingredients together, including salt and pepper (to taste) and chill to allow flavors to combine.
