1 cup quinoa
2 cups water
2 cups , shelled edamame
1 cup , craisins
4 scallions, chopped
8 oz carrots, chopped
3 tbsp vinegar

Recipe Directions for Quinoa with cranberries and edamame-2

  1. cook quinoa in water for 15 minutes

  2. cook edamame in boiling water around 5 minutes

  3. mix all ingredients in bowl, chill, and enjoy
