Recipe Ingredients for Quinoa Couscous

1 cups quinoa
2 cups water
1/2 cups fresh basil
1/4 cups fresh parsley
1/2 cups of raisins
1/2 cups of chickpeas, drained
1/2 cups of toasted almonds
1 tbsp. of olive oil

Recipe Directions for Quinoa Couscous

  1. In a saucepan, pour in 1 cup of quinoa and 2 cups of water.

  2. Bring to a boil.

  3. Reduce to a simmer, cover and cook until all the water is absorbed (about 10-15 minutes).


  4. Remove and put in a bowl.


  5. Chop the basil and parsley, and mix into the quinoa.


  6. Toss in the raisins, chickpeas, almonds, and olive oil.


  7. Salt and pepper to taste.
