Pressure cooker recipe from "South of the Border"

Recipe Ingredients for Quinoa with Corn

1 tablespoon olive oil
1 large onion
1 1/2 cups water
1 cup quinoa
2 cups corn
1/2 teaspoon tarragon
1/2 teaspoon salt

Recipe Directions for Quinoa with Corn

  1. Heat oil in pressure cooker

  2. Saute onion for 2 minutes

  3. Add water and bring to boil

  4. Stir in quinoa, corn, tarragon, and salt

  5. Lock lid in place and immediately set timer for two minutes (whether or not high pressure has been reached)

  6. Allow pressure to drop naturally for 10 minutes

  7. Remove lid, tilting it away from you to allow any excess steam to escape

  8. If quinoa is not quite cooked, replace lid and allow it to steam in the residual heat for a few more minutes

  9. (Don't leave the lid on for too long or the quinoa will turn to mush)

  10. Fluff up with a fork and adjust seasonings.

  11. If there is a bit of liquid left in the bottom of the pot, lift the quinoa and corn with a slotted spoon to serve
