Recipe Ingredients for quinoa corn muffins

1 1/4 cups quinoa
3/4 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1 cup corn
1 cup fat free milk
1/4 cup canola oil
2 egg whites

Recipe Directions for quinoa corn muffins

  1. # In a large bowl, cornmeal, sugar (1/4 cup splenda), baking powder and salt. Add corn.

  2. # Blend quinoa in blender with milks.

  3. # Stir in oil and mixture just until mixed. In a separate mixing bowl, beat egg whites until stiff peaks form; fold into batter. Fill cups in a sprayed greased muffin tin. Bake at 400 degrees F for 10-15 minutes or until muffins test done.
