Recipe Ingredients for Quinoa with corn & mint

2 cups corn
2 tablespoons lemon juice
1 tablespoon lemon zest
1 tablespoon olive oil
1 onion, chopped
1/2 cup chopped mint
1 cup quinoa

Recipe Directions for Quinoa with corn & mint

  1. wash quinoa several times and cook

  2. steam corn, saute onion in olive oil. Add cooked quinoa and stir in all ingredients
