3/4 cups dry whole-wheat couscous 1 cups boiling water 2 green onions, finely chopped, including tops 1/2 carrot, grated 1 cup finely shredded red cabbage 1/4 cup finely chopped fresh parsley 1/4 cup golden raisins or chopped dried apricots 1 T lemon juice 1/8 cup seasoned rice vinegar 1/2 tablespoon olive oil 1/2 teaspoon curry powder 1/2 teaspoons salt

Recipe Ingredients for Quinoa Confetti Salad

3 serving Quinoa Organic Whole Grain (Bob's Red Mill) 1/4 cup dry
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 medium Carrots
1 cup, chopped Cabbage, Red
0.25 cup Parsley
0.25 cup (not packed) Raisins, Seedless
1 tbsp Lemon Juice, Canned Or Bottled
1 serving Rice Vinegar
0.5 1tsp Olive Oil
0.5 tsp Curry Powder
0.5 tsp Sea Salt

Recipe Directions for Quinoa Confetti Salad

  1. In a large bowl, combine quinoa and boiling water. Stir to mix, then cover and let stand until all the water has been absorbed, 5 to 10 minutes. Fluff with a fork.

  2. Add green onions, carrot, cabbage, parsley, and raisins or apricots.

  3. In a small bowl mix lemon juice, vinegar, oil, curry powder, and salt. Add to salad and toss to mix. Serve at room temperature or chilled.
