Recipe Ingredients for Quinoa chicken veggie pilaf

1 cup slices Squash, Summer, Zucchini, Includes Skin
0.5 cup, strips Peppers, Sweet, Red
8 mushroom Mushrooms
10 spears Asparagus
1 cup Quinoa
1 breast, bone and skin removed Chicken, Breast, Meat Only

Recipe Directions for Quinoa chicken veggie pilaf

  1. cook quinoa in a rice cooker.

  2. cook chicken.

  3. stir fry onion, red pepper, asparagus, mushrooms.

  4. mix cooked veggies & chicken into the cooked quinoa.

  5. *add flavor by adding ~1cup water to stirfry pan- scrape the extra bits into quinoa.

  6. mix, add salt & pepper to taste.

  7. consider adding prunes & slivered almonds.
