These freeze very well. Pop in the toaster oven to crisp.

Recipe Ingredients for Quinoa Chicken Patties

1 c water
1/2 c quinoa
1 tbsp dried onion flakes
1 tsp granulated garlic
2 tsp seasoned salt
5 oz canned chicken, drained
1 red bell pepper, thinly sliced
4 oz mushrooms, thinly sliced
2 eggs
30 g quinoa flour
2 tbsp shredded parmesan
1 tbsp nutritional yeast
1 pinch black pepper
1 tbsp olive oil

Recipe Directions for Quinoa Chicken Patties

  1. Cook quinoa with water per package directions, adding onion, garlic, and seasoned salt. Set aside and allow to cool.

  2. Mix remaining ingredients except for olive oil in a bowl and add cooked quinoa.

  3. Form mixture into 12 patties.

  4. Heat oil over medium-high heat. Cook patties until browned on the bottom; flip and cook second side until golden brown.
