I modified the recipe obtained from www.wholegraingourmet.com. Increased the vegetable content and reduced the beans.

Recipe Ingredients for Quinoa Chicken Chili (1 of 8 servings)

1 tbsp olive oil
12 oz chicken breast
1 cup chopped onions
3 cups chicken broth
8 oz chopped green chilis
30 oz canned white beans
1/2 cup uncooked quinoa
2 leeks
2 stalks celery
4 green onions
1 tbsp minced garlic
2 tsp cumin powder
1/8 tsp red pepper powder
1 tsp dried oregano

Recipe Directions for Quinoa Chicken Chili (1 of 8 servings)

  1. Prepare spice blend prepared with garlic, cumin, red pepper, oregano, leek, celery and green onions

  2. Bown cubed chicken and onions in olive oil

  3. Cook quinoa after rinsing well

  4. Add broth to chicken and onions with green chilis and spice blend

  5. Simmer for 15-20 minutes

  6. Stir in white beans and quinoa.

  7. Simmer for an additional 15 minutes
