Quinoa with Chicken and Black Beans

Recipe Ingredients for Quinoa with Chicken and Black Beans

1/2 onion, minced
3 cloves garlic, minced
1 orange or red bell pepper, seeded and diced
1 cup Quinoa
2 cups chicken broth
1/4 teaspoon cumin
1/4 teaspoon cayenne
12 oz Black Beans
16 oz chicken breast
1 dash Salt

Recipe Directions for Quinoa with Chicken and Black Beans

  1. 1.Heat olive oil in a pan over medium heat. Add onion, garlic and bell pepper. Cook 5 minutes or until softened and fragrant. Stir in quinoa, cook 3 minutes.

  2. 2.Pour chicken broth over the top, bring to a boil. Reduce heat, cover and simmer for 15 minutes.

  3. 3.After broth is absorbed, stir in remaining ingredients. Season to taste with salt.

  4. 4.Serve.
