Garlicky Quinoa with Chestnuts and Toasted Pine Nuts

Recipe Ingredients for quinoa with chestnuts

2 cups vegetable broth
1 tablespoon lime juice
1/2 medium red onion
3 cloves garlic
1 1/3 cup quinoa
3 tablespoon toasted pine nuts
1 tsp salt

Recipe Directions for quinoa with chestnuts

  1. In a medium saucepan, steam-fry the chestnuts and onion with lime juice and 1 tablespoon of the vegetable broth until tender.

  2. Add the garlic and cook one more minute.

  3. Add the rest of the broth and bring to a boil.

  4. Add washed quinoa and return to a boil. Cover. Lower the heat and simmer for 12 minutes.

  5. Add the cilantro, pine nuts and salt to taste. Stir. Cover and remove from heat.

  6. Let stand 5 more minutes. Fluff with a fork and serve warm or chilled.
