Recipe Ingredients for Quinoa, Carrot & Apple Salad

1/4 c quinoa
20 g raisins
1 carrot, shredded
1 apple, shredded
1 tbs fresh ginger, grated
1 tbs lemon juice
20 g almonds, chopped

Recipe Directions for Quinoa, Carrot & Apple Salad

  1. Rinse quinoa & cook it with 3/8 c water until tender, about 15 minutes. Add raisins near end of cooking to plump them.

  2. Mix everything else together, and stir in quinoa & raisins. Drain off excess liquid (it's delicious, but makes the salad too watery).
