quick, easy good salad. Can also add salmon for a heartier meal.

Recipe Ingredients for Quinoa and Blackbean Salad

1 cup Quinoa
2 cups water
1 tbsp butter, melted
2 tsp lime zest, grated
2 tbsp fresh lime juice
1 tablespoon olive oil
1 teaspoon sugar
14 1/2 oz black beans, drained & rinsed
1/4 cup diced red pepper
1/4 cup cucumber, seeded & chopped
1 roma tomato, chopped
1/4 cup cilantro, fresh chopped
1 salt and pepper

Recipe Directions for Quinoa and Blackbean Salad

  1. Bring quinoa and water to boil, simmer on low heat for 20 minutes. Cover & let stand 5 minutes

  2. Stir in pat of butter to quinoa

  3. Let quinoa cool to room temperature, transfer to a serving bowl

  4. Whisk together lime zest, juice, olive oil & sugar

  5. Add red peppers and tomato to pot

  6. Drizzle with the lime mixture and toss gently

  7. Fluff with a fork.

  8. Add cilantro & serve.
