A fresh quinoa and black bean salad. Makes a great side dish to grilled chicken.

Recipe Ingredients for Quinoa and Black Beans

0.5 oz Extra Virgin Olive Oil
1 large Onions
4 clove Garlic
0.75 cup Quinoa
1.5 cup Natural Goodness Chicken Broth
1 tsp Cumin
1/4 tsp Cayenne Pepper
1 cup Corn, Sweet, Yellow
15 oz Black Beans
12 oz Mild Diced Tomatoes and Green Chilies
4 oz Cilantro

Recipe Directions for Quinoa and Black Beans

  1. Heat the oil in a medium saucepan over medium heat. Stir in onion and garlic, and saute until lightly browned.

  2. Mix quinoa into the saucepan and cover with chicken broth. Season with cumin, cayenne pepper, salt, and pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 minutes.

  3. Stir frozen corn into the saucepan and continue to simmer about 5 minutes until heated through. Mix in the black beans, tomatoes, and cilantro. Serve.
