Recipe Ingredients for Quinoa with black beans

1 T vegetable oil
2 c white onions, chopped
1 c red bell pepper, chopped
1 c quinoa
2 t chili powder
1/2 t cumin, ground
1/2 t salt
1 c water
15 oz black beans, drained
1/4 c fresh parsley, chopped

Recipe Directions for Quinoa with black beans

  1. Heat oil in heavy medum saucepan over medium-high heat.

  2. Add onions and red pepper; saute until beginning to soften, about 5 minutes.

  3. Stir in next 4 ingredients.

  4. Add water; bring to boil.

  5. Cover, reduce heat to medium-low, and simmer until quinoa is almost tender, about 14 minutes.

  6. Add beans and parsley; cook uncovered until heated through and liquid is fully absorbed, about 3 minutes.

  7. Transfer to bowl.
