Recipe Ingredients for Quinoa with Black Beans

2 tsp vegetable oil
1 cup chopped white onions
1 cup chopped red bell pepper
2/3 cup quinoa,* rinsed, drained
1 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
5 1/2 cups water
1/8 cup chopped fresh cilantro, divided
1 oz Crumbled Cotija cheese or feta cheese (optional)

Recipe Directions for Quinoa with Black Beans

  1. Heat oil in heavy medium saucepan over medium-high heat. Add onions and red pepper; sauté until beginning to soften, about 5 minutes.

  2. Stir in next 4 ingredients. Add water; bring to boil. Cover, reduce heat to medium-low, and simmer until quinoa is almost tender, about 14 minutes.

  3. Add beans and half of the cilantro; cook uncovered until heated through and liquid is fully absorbed, about 3 minutes.

  4. Transfer to bowl; sprinkle with the rest of the cilantro and cheese, if desired.
