Quinoa and black beans with corn.

Recipe Ingredients for Quinoa and Black Beans

0.75 cup Quinoa
1 cup, sliced Onions
3 clove Garlic
1.5 cup Fat Free Vegetable Broth
1.5 cup Corn, Sweet, Yellow
2 cup Black Beans, Organic
0.5 cup Coriander Leaves

Recipe Directions for Quinoa and Black Beans

  1. Saute onion and garlic 1 tsp olive or coconut oil at med heat until lightly brown.

  2. Add thoroughly rinsed quinoa and veg. broth to onions and garlic. Season with S&P, 1 tsp gd. cumin, 1/4 tsp cayenne pepper.

  3. Bring to boil. cover, reduce heat and simmer for 20 minutes.

  4. Add corn and simmer 5 more minutes.

  5. Add black beans (rinsed and drained) and 1/2 c chopped cilantro.

  6. Serve warm or cold.
