Quick, easy, and healthy recipe. Excellent served as a lettuce wrap with avocado. Can be made vegetarian by substituing vegetable broth. From allrecipes.com.

Recipe Ingredients for Quinoa with Black Beans and Corn

0.66 tbsp Vegetable Oil
2 medium (2-1/2" dia) Onions
3 serving Garlic Cloves
1.5 cup Quinoa
3 cup Natural Goodness Chicken Broth
2 tsp Cumin
1 serving Cayenne Pepper
2 cup Frozen Cut Corn
6 cup Beans, Black, Mature Seeds
3 tbsp Fresh Frozen Chopped Cilantro

Recipe Directions for Quinoa with Black Beans and Corn

  1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

  2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

  3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
