Recipe Ingredients for Quinoa with Black Beans and Cilantro

1 tablespoon vegetable oil
2 cups white onions, chopped
1/2 tablespoon olive oil
1 cup zucchini, chopped, preferable an avocado squash
1 cup quinoa, rinsed, drained
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 1/2 cups water
15 ounce black beans, rinsed, drained
1/2 cup chopped fresh cilantro, divided
1/2 lemon, juiced

Recipe Directions for Quinoa with Black Beans and Cilantro

  1. Saute onions in vegetable oil until beginning to caramelize. Remove half of onions to a small pot and set aside.

  2. Add 1/2 tablespoon olive oil, zucchini and salt and pepper to taste and saute until zucchini is tender-crisp. Set Aside.

  3. To the small pot, add quinoa, chili powder, cumin, salt and water, cover and bring to a boil. Reduce heat and simmer 14 minutes. Add beans and 1/4 cup cilantro and heat another 3 minutes. Toss with remaining cilantro and juice of half a lemon.

  4. Season with salt and pepper to taste.
