Recipe Ingredients for Quinoa, black bean and tomato summer salad

1 cup Quinoa
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 medium (4-1/8" long) Onions, Spring Or Scallions
4 serving, raw Cilantro
2 1tsp Olive Oil
1 serving Peanut Oil
1 tsp Sugars, Granulated
15 oz Black Beans Canned

Recipe Directions for Quinoa, black bean and tomato summer salad

  1. Boil and steam quinoa according to instructions in Gourmet magazine.

  2. While the quinoa is cooking, mix together the lime juice, zest, scallions, cilantro and sugar. Add the oil in a steady stream and set aside.

  3. Add the cooked quinoa and toss. Add the black beans, tomatoes, and scallions and toss.
