Recipe Ingredients for quinoa black bean salad

1 cup quinoa
15 oz black beans
1 cup corn
1 red pepper
1/2 red onion
4 green onions
1 1/2 cup grape tomatoes
3 tbsp olive oil
2 tbsp white wine vinegar
2 tsp honey
1/2 tsp curry powder
1/4 tsp cumin
1/4 cilantro

Recipe Directions for quinoa black bean salad

  1. cook quinoa in boiling water 15 min, drain and let sit in covered pan for 15 min

  2. chop peppers, thinly slice red onion, chop green onion

  3. mix olive oil, vinegar, honey and spices well

  4. combine all ingredients in bowl
