Recipe Ingredients for Quinoa Black Bean Salad

15 oz Black Beans
15 oz Corn, Sweet, Yellow
0.5 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 tbsp Olive Oil

Recipe Directions for Quinoa Black Bean Salad

  1. Cook quinoa & allow to cool

  2. Dice tomato and finely dice red onion

  3. Mix tomato and onion in small bowl with olive oil and lime juice; add salt and pepper to taste

  4. Mix quinoa with one can corn (drained) and one can black beans (drained and rinsed).

  5. Serve with dressing ladled on separately.
