Recipe Ingredients for Quinoa & Black Bean Salad

1.5 cup (dry) (uncooked) Quinoa Organic Grain
1.5 cup Black Beans Drained and Rinsed
1.5 tbsp Vinegar red wine
1.5 cup Corn, Sweet, Yellow
0.75 cup chopped Green Bell Pepper
2 tbsp Jalapeno Slices
1/4 cup Coriander Leaves
0.33 cup Lime Juice
1 tsp Kosher Salt
1.25 tsp Cumin
0.33 cup Olive Oil

Recipe Directions for Quinoa & Black Bean Salad

Wash quinoa in at least five changes cold water, rubbing grains and letting them settle before pouring off most of water, until water runs clear. Drain in a fine sieve. In a saucepan of salted boiling water, cook quinoa 10 minute. Drain quinoa in sieve and rinse under cold water. Set sieve (with quinoa) over saucepan of boiling water and steam quinoa, covered with a kitchen towel and lid, until fluffy and dry, about 10 minutes more. While quinoa is cooking, toss 1.5 cups beans with vinegar and salt and pepper to taste. Transfer quinoa to a large bowl and cool. Add beans, 1.5 cups corn (canned or thawed frozen), bell pepper (3/4 cup finely chopped), jalapenos (about 2 Tb seeded and minced--wear rubber gloves!), and 1/4 cup chopped cilantro (coriander leaves). Toss well. Make dressing with lime juice, salt, cumin. Whisk in oil. Drizzle dressing over salad and toss well. Add more salt and pepper to taste. Serve at room temperature.
