Quinoa "Big Bowl" Recipe

Found this recipe on line, with variations. A one-pot, one-bowl meal that is great with fresh bread and a salad. I always seem to have a different green vegetable on hand to add to this recipe. The spinach is very good, but many green veggies will work. If you like Tabasco, it's a great flavor addition!

Recipe Ingredients for Quinoa "Big Bowl"

1 cup uncooked quinoa
2 cups water
2 cups potatoes
1 cup onion
1/2 cup green pepper
3 cloves garlic
2 cups fresh spinach
1/2 cup walnuts
2 tablespoons olive oil

Recipe Directions for Quinoa "Big Bowl"

  1. Rinse and cook quinoa in water in a large sauce pan according to package directions. Meanwhile:

  2. Cut up the potatoes and fry in a little of the olive oil, until cooked through. Season if desired. Set aside.

  3. Cut up the onion and garlic and fry in a little more of the olive oil.

  4. If you include a green vegetable that should be cooked, you may want to do that now using your favorite method. Leafy greens can stay raw to this point.

  5. When the quinoa is sufficiently cooked, add the other ingredients. If needed, add a smidge of water or broth to prevent scorching as you heat through all the ingredients, including wilting the leafy greens, if you used any.

  6. Spoon into bowls and enjoy!
