1/2 teaspoon vegetable oil 1/2 onion, chopped 1-1/2 cloves garlic, peeled and chopped 1/4 cup and 2 tablespoons uncooked quinoa 3/4 cup vegetable broth 1/2 teaspoon ground cumin 1/8 teaspoon cayenne pepper salt and pepper to taste 1/2 cup frozen corn kernels 1 (15 ounce) can black beans, rinsed and drained 1/4 cup chopped fresh cilantro

Recipe Directions for Quinoa & Beans

  1. Saute onion and Garlic in oil.

  2. Mix quinoa, cumin, salt, pepper & cayenne pepper with broth. Boil. Cover, reduce heat and simmer for 20 minutes.

  3. Add corn, beans and cilantro. Simmer 5 more minutes.
