2 tsps olive oil 1/2 medium onion, chopped 1/2 c garlic. minced 1/2c cooked quinoa 7/8 c water 1 vegetable bouillon cube 1/4 tsp ground cumin 1/8 tsp cayenne pepper 1 c frozen baby corn 1/2 c black beans drained salt and pepper to taste 2 T fresh cilantro minced 2 green onions, sliced

Recipe Ingredients for Quinoa with Beans and Corn

2 tsps olive oil
1/2 medium onion, chopped
1/2 c Garlic, Minced
1/2 c quinoa
7/8 c water
1 vegetable bouillon cube
1/4 tsp ground cumin
1/8 tsp cayenne pepper
1 c Corn, Sweet, Yellow
1/2 c Black Beans Drained and Rinsed
1 salt and pepper to taste
2 T fresh cilantro
2 green onions, sliced

Recipe Directions for Quinoa with Beans and Corn

  1. I did this to save time. I cooked my quinoa for 15 mins in a rice cooker

  2. Heat oil medium-sized saucepan over med heat. add onion, garlic and saute til lightly browned about 5 mins.

  3. Add quinoa, water, bouillon, cumin, cayenne pepper,. stir and bring to a boil. reduce heat until water is absorbed.

  4. Stir in carn and cont. cooking about 5 mins. Add beans and cilantro and mix thoroughly. before serving salt, top with green onion.
