Nice BBQ side dish. I used frozen corn, lima beans and edamame. The garbanzo beans are dried.

Recipe Ingredients for Quinoa bean salad

0.25 cup Quinoa
1/2 cup Edamame Soybeans Shelled
0.5 cup Lima Beans, Immature Seeds
1 serving Beans Garbanzo
1/2 cup Corn, Sweet, Yellow
0.5 cup, diced Celery
0.5 cup, chopped Onions
0.5 cup, pared, chopped Cucumber, Peeled
0.5 cup Vinegar red wine
8 serving Rice Wine Vinegar
2 tsp Garlic Powder
1 tsp Pepper, Black
2 tbsp Olive Oil

Recipe Directions for Quinoa bean salad

  1. Hydrate and cook Garbanzo bean in seasoned water. I used season salt, garlic powder and onion powder. Once tender, drain liquid into measuring cup - reserve. Put cooked beans in mixing bowl

  2. Use reserved liquid + plain water to cook quinoa according to package directions

  3. mix all remaining ingredients in a bowl, adjusting seasoning to taste.

  4. you made need to add a little more vinegar depending on how long it sits before serving.

  5. I like to refrigerate it at least overnight giving the frozen vegetables time to fully thaw
