First time making this-- its adjusted from a recipe I found on Spark.com for the record-- it took FOREVER to figure out that even though I specified cooked, the beans and grains ALWAYS default to raw in this program with in turn freaks me out as the calories are generally doubled what they should be. "cooked" shouldn't yield a result for raw.

Recipe Ingredients for Quinoa Bean Casserole

1 cup quinoa
2 cups chicken broth, unsalted
3 cups canned beans
1 1/2 cups salsa
1/2 cups egg white
5 oz cheddar cheese, lowfat
2 cups sweet potato, shredded
1 tbsp cumin
1 tbsp barbeque spices

Recipe Directions for Quinoa Bean Casserole

pre cook the beans and quinoa (i also softened the potato in microwave) Mix all ingredients except 1/2 of cheese and spread into a 9x9" casserole pan. Sprinkle remaining cheese on top and cook at 350 for 20-30 minutes.
