A very simple recipe to adjust and add items as you wish. Also great with chopped mushrooms, bell pepper, diced tomatoes, broccoli, parmesan cheese and anything you feel like eating!

Recipe Ingredients for Quinoa Bake

3/4 cups quinoa
1 1/2 cups vegetable broth
1 medium onion, chopped
1 cup fresh spinach, chopped
1/2 cups fresh parsley, chopped
2 teaspoons lemon juice
1/4 teaspoons crushed red pepper flakes
1 egg
1 teaspoon olive oil

Recipe Directions for Quinoa Bake

  1. Add quinoa and vegetable broth to saucepan and bring to boil over high heat.

  2. Reduce heat to low-temperature, cover and let simmer.

  3. When almost all of the broth is absorbed, add onions to mixture and stir-in.

  4. Continue cooking until all liquid is absorbed.

  5. Transfer contents to a large bowl.

  6. Add spinach, parsley, lemon juice and crushed red pepper.

  7. Let mixture cool (around 20 minutes).

  8. Preheat oven to 350.

  9. Wisk egg and add to mixture, stirring to combine all thoroughly.

  10. Pour olive oil in a 4x6 glass Pyrex dish (or whatever you prefer to use, a loaf pan works, as does a 9x9) and, using a paper towel, coat (grease) the dish/pan.

  11. Pour the quinoa mixture into the greased dish and pat down gently to form an even layer.

  12. Bake in oven for 45-60 minutes (time might need adjusting depending on the kind/size of dish used for baking).
