Recipe Ingredients for Quinoa Avocado Soup

4 cups broth
1 cup quinoa
1 1/2 cup frozen corn
1/3 cup salsa
1 avocado
1/4 cup cilantro

Recipe Directions for Quinoa Avocado Soup

  1. Bring broth to a boil. Stir in quinoa and boil uncovered for 15 minutes.

  2. Stir in corn and salsa, return to simmer

  3. Remove from heat, stir in chopped avocado and cilantro. Serve with lime wedges.
