Recipe Ingredients for Quinoa Avocado Salad

0.25 cup Quinoa
0.25 avocado, NS as to Florida or California Avocados
0.5 cup cherry tomatoes Tomatoes, Red, Ripe
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.33 tbsp Olive Oil
1 tsp Vinegar red wine

Recipe Directions for Quinoa Avocado Salad

  1. Directions:

  2. Start cooking the quinoa in a small pot while you gather the veggies, the feta, and the olive oil. Cut thin slices of the scallions, cube the avocado, halve the tomatoes, and coarsely chop the cilantro.

  3. After cooking the quinoa, allow it to cool and fluff it with a fork. Sometimes I?ll throw it in the freezer for a few minutes to speed up the process.

  4. Once cool, combine the quinoa in a small bowl with the feta, avocado, tomatoes, scallions, and cilantro. Mix in red wine vinegar and olive oil, and add salt if desired. Serve cold and enjoy!
